Ingredients
  

For the Muffins

  • 1 cup pumpkin puree Use pure pumpkin puree, not pumpkin pie filling.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

For the Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/3 cup sugar
  • 1 egg egg
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well blended.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • In another bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.

Assembly and Baking

  • Spoon a small amount of muffin batter into the bottom of each muffin cup, then add a dollop of the cheesecake filling. Top with another spoonful of muffin batter, covering the cheesecake.
  • Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the muffin comes out clean.
  • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.

Notes
