Frosting Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
  • In a large mixing bowl, combine the pumpkin puree, sugar, vegetable oil, and eggs. Mix until smooth and creamy.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix; you want the batter to be light and fluffy!
  • Transfer the batter into the prepared baking pan and spread it evenly.

Baking

  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, allow the bars to cool completely in the pan.

Frosting

  • In a separate bowl, beat together the softened cream cheese and butter until smooth.
  • Gradually add the powdered sugar and vanilla extract, mixing until well combined and creamy.
  • Once the pumpkin bars are cooled, evenly spread the creamy frosting on top.

Notes
