  • ½ cup silken tofu Provides a smooth texture.
  • ¼ cup protein powder (vanilla or chocolate) Choose your preferred flavor.
  • 2 tablespoons cocoa powder Unsweetened recommended.
  • ¼ cup brewed coffee (cooled) Use strong coffee for flavor.
  • 2 tablespoons honey or maple syrup Adjust sweetness as desired.
  • 1 teaspoon vanilla extract

Optional Garnish

  • as needed Dark chocolate shavings For decoration.

Preparation

  • In a blender or food processor, combine the Greek yogurt, silken tofu, protein powder, cocoa powder, brewed coffee, honey (or maple syrup), and vanilla extract. Blend until smooth.
  • Taste the mixture and adjust sweetness by adding more honey or maple syrup if desired.
  • In serving dishes, layer a generous amount of the pudding. Use individual cups for presentation.
  • Cover the cups with plastic wrap and refrigerate for at least 2-3 hours (or overnight for best results).
  • Once set, remove from the fridge. Top with dark chocolate shavings or a dusting of cocoa powder before serving.

Notes

Store in the fridge for up to 5 days. For creamier texture, consider full-fat yogurt or adding avocado. Presentation in clear glass cups enhances appeal.
