  • ½ cup protein powder your choice of flavor: vanilla or chocolate works great
  • ¼ cup honey or maple syrup for a vegan option
  • 1 cup dark chocolate chips ensure they are halal-compliant
  • 1 tablespoon coconut oil for a silky consistency

Preparation

  • Start by lining a muffin tin (or using silicone muffin cups) with paper liners.
  • In a mixing bowl, combine the peanut butter, protein powder, and honey until smooth.
  • Spoon about a tablespoon of the mixture into each muffin cup and flatten it gently.
  • Pop the muffin tin into the freezer for about 10-15 minutes.
  • Melt the dark chocolate chips along with coconut oil in a microwave-safe bowl.
  • Once the peanut butter filling is firm, pour the melted chocolate over each cup.
  • Sprinkle toppings such as crushed nuts or sea salt on top.
  • Return the muffin tin to the freezer for another 15-20 minutes to harden the chocolate.
  • Remove the cups from the tin and enjoy!

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for long-term storage. For enjoyed texture, let them sit at room temperature for a few minutes or microwave for 10 seconds.
