  • 1 cup almond flour
  • 1/2 cup protein powder choose your favorite flavor
  • 1/2 cup nut butter e.g., almond or peanut butter
  • 1/4 cup maple syrup or honey
  • 1/4 teaspoon vanilla extract
  • 1/4 cup chocolate chips or other mix-ins optional
  • a pinch salt

Preparation

  • In a medium mixing bowl, combine the almond flour, protein powder, and pinch of salt. Stir everything together until well blended.
  • Pour in the nut butter. You can use almond butter for a milder flavor or peanut butter for a richer taste.
  • Add the maple syrup or honey, along with the vanilla extract. This is where the magic happens, so don’t skip it!
  • Using a spatula or your hands, mix until everything is combined. The mixture should come together easily; if it’s too dry, add a touch more nut butter or sweetener.
  • If you’re using chocolate chips or other mix-ins, fold them into the dough gently.
  • Sneak a taste! Adjust sweetness if necessary by adding a little more maple syrup.

Notes

For a healthier version, consider using sugar-free syrup or powdered sweeteners. Almond flour can also be replaced with oat flour. Store in an airtight container in the refrigerator for up to one week, or freeze for up to three months.
