Preparation

  • Peel the potatoes and cut them into small, even cubes. Do the same with the bell pepper and onion.
  • Bring a pot of water to a boil. Add the potato cubes and cook for about 5-7 minutes until they are slightly tender but not fully cooked. Drain and set aside.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 3-5 minutes until they begin to soften.
  • Add the parboiled potatoes to the skillet. Spread them out in an even layer and cook without stirring for a few minutes to allow them to crisp up.
  • Sprinkle with salt and pepper to taste. Stir the mixture occasionally for about 10-15 minutes until the potatoes are golden brown and crispy.
  • Remove from heat once the potatoes reach your desired level of crispiness. Toss in fresh herbs if desired.

Notes

For optimal texture, use waxy potatoes like Yukon Gold. Parboiling ensures even cooking and crispy finish. Adjust vegetables as desired.
