Ingredients

  • 2 cups cottage cheese
  • 1 cup pizza sauce Store-bought or homemade
  • 2 cups shredded mozzarella cheese
  • 1 cup chopped bell peppers Mixed colors
  • 1 cup sliced mushrooms
  • 1 medium onion, diced

Seasonings

  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Chop the bell peppers, slice the mushrooms, and dice the onion. Prepare any other veggies or toppings as desired.

Mixing Ingredients

  • In a large mixing bowl, combine the cottage cheese, half of the mozzarella cheese, pizza sauce, dried oregano, garlic powder, salt, and pepper. Stir well.

Layering

  • In a greased baking dish, spread half of the cottage cheese mixture at the bottom. Layer the chopped vegetables and any other toppings you desire. Top with the remaining cottage cheese mixture.
  • Sprinkle the remaining mozzarella cheese over the top.

Baking

  • Place the dish in the preheated oven and bake for 30-35 minutes or until the cheese is bubbly and golden.
  • Let cool for a few minutes before serving. Slice into portions and enjoy warm.

Notes

Feel free to experiment with toppings like zucchini or spinach for added flavor and nutrition. Keep an eye on the dish while baking, and cover with foil if the top starts browning too quickly. Store leftovers in an airtight container in the fridge for 3-5 days and reheat at 350°F (175°C) for 15-20 minutes.
