Cuisine Mexican
- 1 cup dried pinto beans or 2 cans, rinsed and drained
- 1 tablespoon olive oil
- 1 medium onion diced
- 3 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt to taste
- 4 cups vegetable broth or water
Prepare the Beans: If using dried pinto beans, rinse them under cold water and soak them overnight for optimal texture. Drain and set aside.
Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until they become translucent. Stir in minced garlic and cook for another minute.
Add the Spices: Sprinkle in the ground cumin, chili powder, smoked paprika, and salt. Stir to coat the onion and garlic in the spices, cooking for about 1 minute until fragrant.
Cook the Beans: Add the rinsed and drained pinto beans (or canned beans) and pour in the vegetable broth. Bring to a gentle boil, then reduce the heat to low. Cover and let simmer for 30-40 minutes if using dried beans, or about 10-15 minutes for canned beans.
Adjust Consistency: You want the beans to be tender and the liquid to be flavorful but not too broth-y. Mash some of the beans slightly to create a creamier texture if desired.
Serve and Garnish: Taste and adjust the seasoning if needed. Serve hot topped with fresh cilantro, a squeeze of lime juice, or diced tomatoes for a burst of brightness.
