  • 3 large eggs
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, beat the softened butter and sugar until light and fluffy, about 3-4 minutes.
  • One at a time, add the eggs to the mixture, ensuring each is fully incorporated before the next.
  • Add the pineapple juice and vanilla extract, mixing until smooth.
  • Gradually add the dry ingredients to the wet mixture. Stir until just combined—don’t overmix!
  • Transfer your batter to the prepared baking pan, smoothing the top.

Baking

  • Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use fresh pineapple juice for enhanced flavor. Gentle mixing prevents a dense cake. Consider adding coconut flakes for a tropical twist.
