Preparation

  • Start by peeling and dicing your pineapple into bite-sized pieces.
  • Peel and dice the cucumbers as well.
  • Finely chop the red bell pepper and red onion.

Mixing

  • In a large mixing bowl, combine the diced pineapple, cucumbers, bell pepper, red onion, and chopped mint leaves.
  • Squeeze the juice of one lime over the salad mixture.
  • Add salt and pepper to taste.
  • Gently toss the salad until everything is evenly coated.
