Preparation

  • In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  • In another bowl, combine the milk, egg, and melted butter. Whisk until smooth.
  • Pour the wet ingredients into the dry ingredients. Gently mix until just combined; small lumps are okay.

Cooking

  • Heat a nonstick skillet or griddle over medium heat. Lightly grease if necessary.
  • For each pikelet, pour about 2-3 tablespoons of batter onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip carefully and cook for another 1-2 minutes, until golden brown on both sides.
  • Repeat with remaining batter, adding more butter to the skillet as needed.
  • Serve hot with your favorite toppings like syrup, fruit, or yogurt.

Notes

For perfect pikelets, ensure your baking powder is fresh and adjust the consistency of the batter with milk as needed. Store leftovers in an airtight container in the refrigerator for up to three days.
