  • 1 pound ground beef
  • 1 cup finely chopped green bell pepper
  • 1 cup finely chopped onion
  • 1 cup shredded provolone cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup milk
  • optional additional provolone or mozzarella cheese for topping

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, add the chopped green bell pepper and onion. Sauté them for about 5-7 minutes until they are soft and fragrant.
  • In a large bowl, combine the ground beef, sautéed vegetables, breadcrumbs, cheese, eggs, garlic powder, salt, black pepper, and milk. Mix until well-combined.
  • Transfer the meat mixture onto a lined baking sheet or into a loaf pan. Shape it into a free-form loaf. If using cheese, add it on top.
  • Place the meatloaf in the preheated oven and bake for 45-50 minutes or until it reaches an internal temperature of 160°F (70°C).
  • Once done, allow the meatloaf to rest for about 10 minutes before slicing.

Notes

For variations, try different cheese types like cheddar or gouda, and customize with veggies like mushrooms or jalapeños. Store leftovers in an airtight container for up to 3-4 days.
