  • 1 pound flank steak or sirloin, thinly sliced Choose flank steak or sirloin for best flavor.
  • 1 large onion, sliced Preferably a sweet onion for enhancing flavor.
  • 1 large green bell pepper, sliced Feel free to use other colored bell peppers.
  • to taste salt and pepper Adjust seasoning as per your preference.
  • 2 tablespoons olive oil For sautéing the vegetables.
  • 1 cup provolone cheese, shredded Can substitute with other types of cheese if desired.
  • as needed cooked white rice or quinoa Used as a base for the bowl.
  • optional sliced jalapeños, chopped parsley, or hot sauce Customize your bowl with your favorite toppings.

Preparation

  • Start by thinly slicing your flank steak and veggies to ensure even cooking.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and bell peppers, and sauté until soft and slightly caramelized, about 5-7 minutes. Season with salt and pepper.
  • Push the veggies to one side of the skillet and add the sliced steak. Season the steak with salt and pepper, and cook until browned, usually around 5-6 minutes for medium-rare.
  • Once the steak is cooked, sprinkle the shredded provolone cheese over the steak and veggies. Cover with a lid for a few minutes until the cheese has melted.
  • In serving bowls, spoon your cooked rice or quinoa as a base. Layer the cheesy steak and veggie mixture on top. Add any optional toppings you desire.
  • Dig in while it’s warm and enjoy the multitude of flavors and textures in every delicious bite.

Notes

For best texture, slice steak thinly and consider freezing it briefly before slicing. Experiment with different cheeses and don’t hesitate to get creative with additional veggies.
