Ingredients
  

Main Ingredients

  • 1 pound flank steak, sliced thinly
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 1 green bell pepper, diced (optional) Add for extra flavor.
  • Salt and pepper to taste
  • 1 cup shredded provolone or mozzarella cheese
  • 4 large flour tortillas
  • Sour cream and salsa for serving Optional.

Instructions
 

Cooking the Steak

  • In a large skillet over medium-high heat, add the olive oil. Once hot, add the sliced flank steak. Season with salt and pepper. Cook until browned and cooked through, about 3-4 minutes.

Sautéing the Vegetables

  • Reduce the heat to medium. Add the sliced onions (and bell peppers, if using) to the skillet. Sauté until soft and fragrant, about 5 minutes. Remove from heat.

Assembling the Quesadillas

  • Place a tortilla in the skillet over low heat. Layer half of the tortilla with a portion of the steak mixture and sprinkle with cheese. Fold the tortilla over to create a half-moon shape.

Cooking the Quesadilla

  • Cook on one side until golden brown and crispy, about 2-3 minutes. Carefully flip and cook the other side until the cheese is melted and the tortilla is crispy.

Repeating the Process

  • Repeat the process with the remaining tortillas and filling.

Serving

  • Cut the quesadillas into wedges and serve warm with sour cream and salsa for dipping.

Notes

For perfect quesadillas, cut steak against the grain, don't overstuff, and keep warm in the oven while cooking multiple.
