  • 1 large head cauliflower Remove leaves and stem, cut into bite-sized florets.
  • 3 tablespoons olive oil For coating the cauliflower.
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 zest of lemon Adds flavor.
  • 1 tablespoon juice of lemon Freshly squeezed for best flavor.
  • to taste Fresh parsley For garnish.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Prepare the cauliflower by removing the leaves and stem, and cutting the head into bite-sized florets.
  • In a large bowl, combine the cauliflower florets, olive oil, salt, pepper, lemon zest, and lemon juice. Toss until evenly coated.

Roasting

  • Spread the cauliflower out in a single layer on a baking sheet lined with parchment paper.
  • Roast in the oven for 25-30 minutes or until golden brown and crispy, stirring halfway through.

Serving

  • Remove from the oven, let cool for a couple of minutes, and garnish with freshly chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for 1-2 months. Reheat in the oven to retain crispiness.
