Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • Grate the zucchini using a box grater. Squeeze out excess moisture with a clean kitchen towel or paper towel.

Mixing

  • In a large mixing bowl, whisk together sugar, vegetable oil, eggs, and vanilla extract until well combined.
  • In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, stirring just until combined. Don’t overmix!
  • Gently fold in the grated zucchini and any optional ingredients like nuts or chocolate chips.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Don't skip squeezing the zucchini for moisture control. Optional mix-ins like nuts or chocolate chips enhance flavor. Store in an airtight container at room temperature for 2-3 days, or refrigerate for longer freshness.
