  • 3 cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast 1 packet
  • 1 ¼ cups warm water About 110°F
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1 tablespoon olive oil For added flavor

Preparation

  • In a small bowl, dissolve the sugar in warm water and sprinkle the active dry yeast on top. Let it sit for about 5-10 minutes until it’s foamy.
  • In a large mixing bowl, combine the flour and salt. Once the yeast is activated, pour it and the olive oil into the flour mixture. Stir until it forms a soft dough.
  • On a lightly floured surface, knead the dough for about 8-10 minutes until it’s smooth and elastic.
  • Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about an hour until it doubles in size.
  • Preheat your oven to 475°F (245°C) with a baking stone or baking sheet inside.
  • Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball, then flatten it into a disc about ¼ inch thick.
  • Place the discs on the hot baking stone or sheet, and bake for 5-7 minutes until they puff up and turn golden.
  • Take them out and let them cool in a clean kitchen towel.

Notes

To ensure perfect pita bread, check water temperature, avoid overworking the dough, use a baking stone for steam, and experiment with flours. Store leftover pita in an airtight container or freeze for up to a month.
