Ingredients
  

For the Fritters

  • 2 cups Fresh or frozen corn (If using frozen, thaw first)
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 large Egg
  • ½ cup Milk
  • ¼ cup Green onions, chopped (optional for extra flavor)
  • Vegetable oil For frying

Preparation

  • In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Stir well to combine.
  • In a separate bowl, whisk together the egg and milk until smooth.
  • Pour the wet ingredients into the dry ingredients. Carefully fold in the corn and green onions (if using). You want it mixed, but don’t overdo it—lumps are good!
  • In a frying pan, heat about ¼ inch of oil over medium-high heat.

Cooking

  • When the oil is hot, drop spoonfuls of the batter into the pan. Fry until the fritters are golden brown on one side—about 3-4 minutes. Flip them and repeat until both sides are crispy.
  • Remove the fritters and let them drain on a paper towel. Serve warm with your favorite dipping sauce!

Notes

Don’t overmix the batter; some lumps are good to maintain texture. Ensure the oil is hot before frying; test it by dropping a small piece of batter—if it sizzles, it’s ready. Feel free to experiment with different herbs or spices for additional flavor!
