Ingredients
  

Fritter Base

  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup diced onion
  • 1/4 cup chopped green onions
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1/4 cup milk
  • as needed Oil for frying

Preparation

  • In a bowl, combine corn, onion, green onions, flour, cornmeal, baking powder, salt, and pepper.
  • In another bowl, whisk together the egg and milk.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Drop tablespoonfuls of the mixture into the hot oil and fry until golden brown on both sides, about 3-4 minutes.
  • Remove and drain on paper towels.

Serving

  • Serve hot with your favorite dipping sauce or as a side dish.

Notes

Ensure oil is hot enough before frying for crispy fritters. Fry in batches to prevent overcrowding. Customize with peppers, jalapeños, or cheese for different variations.
