For the Banana Cake

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 cup mashed ripe bananas (about 2-3 bananas) Use very ripe bananas for the best flavor.
  • 0.5 cups unsalted butter, softened
  • 3 pieces eggs
  • 1 cup buttermilk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt

For the Frosting

  • 1 cup unsweetened whipped cream
  • 1 cup cream cheese, softened
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract

For Toppings

  • Fresh banana slices
  • Maraschino cherries
  • Chocolate syrup
  • Chopped nuts
  • Sprinkles For that fun touch!

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, followed by the mashed bananas and vanilla extract. Mix until well combined.
  • Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk. Mix until just combined.

Baking

  • Pour equal amounts of the batter into the prepared pans and smooth the tops.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Frosting and Assembly

  • While the cakes cool, beat the cream cheese until creamy.
  • Add the powdered sugar and vanilla extract, then fold in the whipped cream until smooth.
  • Once the cakes are cool, place one layer on a serving plate. Spread a layer of frosting on top and add some banana slices.
  • Place the second layer on top and frost the entire cake.
  • Decorate the top of the cake with additional banana slices, maraschino cherries, chocolate syrup, chopped nuts, and sprinkles.

Notes

Use ripe bananas for the best flavor. Don't overmix the batter to keep the cake fluffy. Ensure cakes are completely cool before frosting to prevent melting.
