  • 1 cup creamy peanut butter Use a creamy, natural peanut butter.
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • a pinch powdered sugar for dusting (optional)

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  • In a large mixing bowl, cream together the softened butter, peanut butter, and granulated sugar until light and fluffy, about 2-3 minutes using an electric mixer.
  • Add in the vanilla extract, baking soda, and salt, mixing until fully incorporated.
  • Gradually add the flour to the mixture, stirring until a dough forms. Do not overmix.
  • Using a cookie scoop or your hands, form small balls of dough and place them on the prepared baking sheet, leaving space between each cookie.
  • Flatten each ball lightly with the back of a fork, creating a crisscross pattern.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack. Dust with powdered sugar if desired.
