Ingredients

  • 1 box brownie mix typically 18-20 oz
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the brownie mix, creamy peanut butter, and eggs. Use a spatula or electric mixer to blend until smooth and well combined.
  • Add the granulated sugar, flour, vanilla extract, and a pinch of salt to the mixture. Stir until everything is fully combined and a thick batter forms.
  • Scoop out tablespoon-sized portions of the cookie dough and place them on the prepared baking sheet, spacing them about two inches apart.
  • Using a toothpick or skewer, swirl some extra peanut butter into the tops of each cookie for that signature look!
  • Bake in the preheated oven for about 10-12 minutes or until the edges are set but the centers look slightly undercooked (they’ll firm up as they cool).
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
