Ingredients
  

Crust

  • 1 9-inch pre-made tart crust

Filling

  • 4 ripe peaches, peeled, pitted, and sliced Choose ripe but firm peaches.
  • 1 cup heavy cream
  • 1/2 cup cream cheese, softened Make sure it's at room temperature.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • to taste mint leaves for garnish Optional

Preparation

  • If using a pre-made tart crust, place it in a 9-inch tart pan, pressing it evenly into the bottom and up the sides. Optionally, make a homemade crust.

Making the Filling

  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add in the heavy cream, powdered sugar, vanilla extract, and lemon juice. Mix until it reaches a velvety consistency.

Assembling the Tart

  • Spread the cream cheese mixture evenly into the prepared tart crust.
  • Arrange the peach slices on top of the creamy filling in a beautiful pattern.

Chilling and Serving

  • Cover the tart with plastic wrap and place it in the refrigerator for at least 2 hours to allow the flavors to meld and the filling to set.
  • Once chilled, remove the tart from the refrigerator and garnish with fresh mint leaves if desired. Slice and enjoy.

Notes

Leftover tart can be stored in the refrigerator for up to 3 days. Cover well to maintain freshness. No need to reheat; best enjoyed chilled. Consider adding a hint of cinnamon or nutmeg to the filling for an extra layer of flavor.
