Ingredients
  

Pasta and Sauce Ingredients

  • 8 oz pasta of your choice spaghetti, fettuccine, or penne work great!
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach leaves
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese Optional: additional for serving
  • Salt and pepper to taste
  • Optional: red pepper flakes for a bit of heat

Instructions
 

Cooking the Pasta

  • Begin by boiling a pot of salted water. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

Making the Sauce

  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Toss in the fresh spinach and cook until wilted, approximately 2-3 minutes.
  • Pour in the heavy cream, stirring to combine. Let it simmer for a couple of minutes to thicken.
  • Add the cooked pasta to the skillet, along with the Parmesan cheese. Stir until everything is well coated. If the sauce is too thick, add a bit of the reserved pasta water to achieve your desired consistency.
  • Season with salt, pepper, and red pepper flakes (if using) to taste.
  • Serve immediately, garnished with extra Parmesan if desired.

Notes

For a lighter option, use half-and-half instead of heavy cream. Store leftovers in an airtight container in the refrigerator for up to 3 days.
