  • 0.5 cup grated Parmesan cheese Use freshly grated for better melting.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash the baby potatoes under cold water, scrub them gently, and pat them dry.
  • In a large bowl, toss the potatoes with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  • Spread the potatoes in a single layer on a baking sheet, cut side down.

Roasting

  • Roast the potatoes in the preheated oven for 20-25 minutes or until golden brown and tender.
  • Sprinkle grated Parmesan cheese over the potatoes and return to the oven for an additional 5 minutes to melt the cheese.

Serving

  • Remove from the oven, garnish with fresh parsley, and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10-15 minutes for best texture.
