- 4 cod fillets
- salt and pepper to taste
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- 1/4 cup butter
- 1 garlic clove minced
- 1 lemon juice and zest
- 1/4 cup chicken broth
- 2 tbsp fresh parsley chopped
Pat the cod fillets dry with paper towels and season with salt and pepper. Lightly dredge the fillets in flour, shaking off any excess.
Heat the olive oil in a skillet over medium-high heat. Add the cod fillets and cook until golden brown and cooked through, about 3-4 minutes per side. Remove from the skillet and set aside.
In the same skillet, reduce the heat to medium and add the butter. Once melted, add the garlic and cook until fragrant, about 1 minute. Stir in the lemon juice, zest, and chicken broth. Simmer for 2-3 minutes until slightly reduced.
Return the cod fillets to the skillet, spooning the sauce over the top. Cook for an additional 1-2 minutes until warmed through. Sprinkle with fresh parsley before serving.
