  • 1 pound breakfast sausage, crumbled
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon dried mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 slices bread, cut into cubes
  • 2 cups shredded cheese (cheddar or your favorite)
  • Optional: chopped veggies like bell peppers, onions, or spinach Customize to your liking

Preparation

  • In a skillet over medium heat, cook the crumbled sausage until browned and fully cooked. Drain excess fat, if necessary, and set aside.
  • In a large bowl, whisk together the eggs, milk, mustard, salt, and pepper until well combined.
  • In a greased 9x13 inch baking dish, layer the bread cubes, followed by the cooked sausage and your chosen vegetables if using.
  • Pour the egg mixture over everything, ensuring the bread is fully coated.
  • Sprinkle the shredded cheese evenly over the top of the casserole.
  • Cover the dish with foil or plastic wrap and refrigerate overnight to allow the flavors to meld and the bread to soak up the egg mixture.
  • The next morning, preheat your oven to 350°F (175°C). Remove the cover and bake the casserole for about 45 minutes or until the center is set and the top is golden.
  • Let it cool slightly, slice into squares, and serve warm.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave or bake in the oven at 350°F (175°C) until warmed through. This casserole is also great for meal prep; simply freeze individual portions for up to two months.
