  • 8 slices whole grain or sourdough bread, cubed Sturdy bread is best.
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite) You can mix different types of cheese.
  • 6 large eggs
  • 2 cups milk (or a milk alternative) Any milk type can work.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: chopped onions or bell peppers Add for extra flavor.

Preparation

  • Cube the bread into bite-sized pieces.
  • In a greased 9x13-inch baking dish, spread half of the cubed bread in an even layer.
  • Sprinkle half of the chopped spinach and half of the shredded cheese over the bread.
  • Layer the remaining bread cubes on top, followed by the remaining spinach and cheese.
  • In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  • Pour the egg mixture evenly over the layered bread, spinach, and cheese, ensuring all the bread is soaked.
  • Cover the dish with plastic wrap and refrigerate overnight.
  • The next morning, preheat the oven to 350°F (175°C). Remove the plastic wrap.
  • Bake the strata for 45-50 minutes, or until puffed and golden brown.
  • Let cool for a few minutes, slice, and serve warm.

Notes

Store leftovers in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 15-20 minutes or microwave individual portions.
