Ingredients

  • 4 medium-sized potatoes preferably russet or Yukon gold
  • 1 large onion sweet or yellow
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • fresh or dried herbs optional, like rosemary, thyme, or parsley

Instructions

  • Preheat your oven to 425°F (220°C). The hot oven will ensure that your potatoes get that crispy exterior.
  • Peel and slice the potatoes into even wedges or cubes for uniform cooking.
  • Slice the onion into thin rings or wedges, depending on your preference.
  • In a large bowl, combine the potatoes and onions. Drizzle them with olive oil, and sprinkle with garlic powder, salt, and pepper. Toss everything together until the vegetables are evenly coated.
  • Spread the mixture in a single layer on a baking sheet. Ensure there is enough space between the pieces so they can cook evenly and get crispy.
  • Place the sheet in the preheated oven and roast for about 30-35 minutes, or until the potatoes are golden and tender. Flip the mixture halfway through for even browning.
  • Once done, remove from the oven and serve hot, garnished with fresh or dried herbs if desired.
