  • 4 pieces boneless, skinless chicken breasts Fresh, not frozen for best results.
  • 1 cup breadcrumbs (preferably Italian-seasoned) For added flavor.
  • 1/2 cup grated Parmesan cheese Freshly grated is recommended.
  • 1 cup marinara sauce Homemade or store-bought.
  • 1 cup shredded mozzarella cheese For topping.
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Preparation

  • Preheat the oven to 400°F (200°C).
  • Season the chicken breasts with salt, pepper, garlic powder, and oregano.
  • In one bowl, mix the breadcrumbs with the grated Parmesan cheese.
  • Dip each chicken breast in olive oil, then coat with the breadcrumb mixture.
  • Place the breaded chicken breasts in a baking dish lined with parchment paper.

Cooking

  • Bake for 20 minutes, or until the chicken is cooked through and the coating is crisp.
  • Remove the chicken from the oven and spoon marinara sauce over each piece. Top with shredded mozzarella cheese.
  • Return to the oven for an additional 5-7 minutes, or until the cheese has melted and is bubbly.
  • Garnish with fresh herbs if desired and serve hot with your favorite side dish.

Notes

For extra crispy crust, consider using Panko breadcrumbs. Marinating chicken beforehand adds flavor. Store leftovers in an airtight container for up to 3 days. Reheat in the oven at 350°F (175°C) for 15 minutes to maintain crispness.
