Pasta and Dressing

  • 1 cup orzo pasta Cooked until al dente
  • 1/4 cup olive oil For dressing
  • 2 tablespoons lemon juice For dressing

Fresh Vegetables

  • 1 cup cherry tomatoes, halved Adds sweetness
  • 1 cup cucumber, diced For crunch

Preparation

  • In a large pot of salted boiling water, add the orzo. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process.
  • While the orzo is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Add the cooled orzo to the bowl of vegetables. Pour the dressing over the top and toss gently until everything is evenly coated.
  • Finally, stir in the chopped parsley for a fresh finishing touch.
  • This Orzo Pasta Salad can be enjoyed immediately or chilled in the fridge for 30 minutes to enhance the flavors.

Notes

Dress the salad just before serving to keep the vegetables crisp. Customize with your favorite veggies like zucchini or corn, and you can add protein such as grilled chicken or chickpeas.
