  • 1 cups granulated sugar
  • 0.5 cups unsalted butter (softened)

  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 tablespoon zest of orange Add zest for enhanced flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it or lining it with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  • In a large mixing bowl, beat the softened butter and sugar using an electric mixer until the mixture is light and fluffy, about 3-4 minutes.
  • Beat the eggs in one at a time, mixing well after each addition and scraping the sides of the bowl.
  • Pour in the orange juice and zest, mixing until just combined.
  • Gradually add the dry mixture to the wet ingredients and mix until you have a smooth batter. Be careful not to over-mix.
  • Transfer the batter to your prepared cake pan, smoothing the top.

Baking

  • Bake the cake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Serving

  • Dust with powdered sugar if desired, slice, and enjoy your magnificent Orange Juice Cake!

Notes

For a healthier alternative, replace half the butter with unsweetened apple sauce. Store leftovers in an airtight container for up to 3 days at room temperature, or refrigerate for up to a week. To revive the cake, thaw at room temperature or gently warm in the microwave for 15-20 seconds.
