  • 1 cup fresh cranberries, roughly chopped
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup sugar
  • 2 large eggs
  • 0.33 cup vegetable oil
  • 1 cup freshly squeezed orange juice
  • 1 teaspoon vanilla extract
  • 1 piece zest of one orange

Glaze Ingredients

  • 0.5 cup powdered sugar
  • 2 tablespoons orange juice

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a medium bowl, mix the flour, baking powder, and salt. Set aside.
  • In a large bowl, whisk together sugar, eggs, vegetable oil, orange juice, orange zest, and vanilla extract until well combined.
  • Gradually fold the dry ingredient mixture into the wet ingredients until just combined. (Secret technique: Don’t overmix—this keeps your bread fluffy!)
  • Gently fold in the chopped cranberries being careful not to break them apart.
  • Pour the batter into the prepared loaf pan, smoothing the top.

Baking

  • Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean and the top is golden.
  • Once done, allow it to cool in the pan for about 15 minutes before transferring to a wire rack.

Glazing

  • For the glaze, whisk powdered sugar and orange juice together until smooth, then drizzle over the cooled bread.

To maintain freshness, store in an airtight container at room temperature for up to 2 days. Can be frozen for up to 3 months. Reheat slices in the air fryer or oven for best texture.
