Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/3 cup fresh orange juice
  • 1/4 cup buttermilk
  • 1 tablespoon orange zest
  • 1 1/2 cups fresh or dried cranberries
  • Optional Orange Glaze
  • 1/2 cup powdered sugar
  • 2-3 tablespoons fresh orange juice

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  • Whisk together flour, baking powder, baking soda, and salt.
  • In a separate bowl, mix sugar, oil, eggs, orange juice, buttermilk, and orange zest.
  • Gradually fold the dry ingredients into the wet mixture.
  • Gently fold in cranberries.
  • Pour batter into the prepared pan and bake for 50-60 minutes.
  • Cool for 10 minutes in the pan, then transfer to a wire rack.
  • Drizzle with optional orange glaze once completely cooled. Enjoy!
