Preparation

  • In a bowl, combine chicken pieces, cumin, paprika, turmeric, coriander, salt, and pepper. Let it marinate for at least 15 minutes.

Cooking

  • In a large pot, heat olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic and sauté for an additional minute.
  • Add the marinated chicken pieces to the pot. Cook, stirring occasionally, until browned, about 5-7 minutes.
  • Pour in the rice and chicken broth, stirring well. Bring to a boil, then reduce the heat to a simmer.
  • Cover the pot and let it cook for 20 minutes, or until rice is fluffy and the liquid is absorbed.
  • Fluff the rice with a fork and garnish with fresh vegetables and herbs before serving.

Notes
