Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 can 14.5 oz diced tomatoes (with juice)
  • 4 cups beef or chicken broth
  • 1 1/2 cups uncooked elbow macaroni
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese softened
  • Optional: milk or extra broth to thin parsley for garnish

Instructions
 

  • Heat oil in a pot and brown the ground beef. Drain if needed.
  • Add onions and garlic; sauté until softened.
  • Stir in tomatoes, broth, and seasonings. Bring to a boil.
  • Add macaroni and simmer until tender, about 10-12 minutes.
  • Stir in cheddar cheese and cream cheese until melted and creamy.
  • Adjust seasoning, garnish, and serve hot.
