- 1 tbsp olive oil
- 1 lb ground beef
- 1 onion diced
- 2 garlic cloves minced
- 1 can 14.5 oz diced tomatoes (with juice)
- 4 cups beef or chicken broth
- 1 1/2 cups uncooked elbow macaroni
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 4 oz cream cheese softened
- Optional: milk or extra broth to thin parsley for garnish
