  • 1 lb chicken breast, cubed
  • 2 tablespoons olive oil
  • 3 cups chicken broth
  • 1 lb gnocchi (store-bought)
  • 1 cup heavy cream Can be substituted with half-and-half or a dairy-free alternative
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the cubed chicken and season with salt, pepper, and garlic powder. Cook until the chicken is golden brown and no longer pink inside, about 5-7 minutes.
  • Pour in the chicken broth and bring to a gentle boil. Allow to simmer for about 5 minutes.
  • Add the gnocchi to the boiling broth. Let them cook for about 2-3 minutes until they float to the top, indicating they’re done.
  • Lower the heat and add the heavy cream, lemon juice, and lemon zest into the pot. Stir well to combine everything. Allow it to simmer for another 2-3 minutes to let the flavors meld.
  • Once everything is well mixed and heated through, taste and adjust seasoning, if needed. Serve hot, garnished with fresh parsley.

Notes

For a lighter version, consider substituting the heavy cream. Ensure the chicken is cooked through based on cube size. Store leftovers in an airtight container in the refrigerator for up to 3 days.
