Main Ingredients

  • 1 pound Italian sausage Use either sweet or spicy sausage based on preference.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth Homemade broth yields better flavor.
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces Can substitute with penne or fusilli if needed.
  • 2 cups ricotta cheese For a lighter version, use part-skim ricotta.
  • 2 cups shredded mozzarella cheese
  • to taste Parmesan cheese, for serving
  • for garnish Fresh basil

Preparation

  • In a large pot, cook the Italian sausage, onion, and garlic over medium heat until the sausage is browned. Drain excess fat.

Cooking

  • Stir in the broth, crushed tomatoes, and Italian seasoning. Bring to a boil.
  • Add the lasagna noodles and cook until tender, about 10 minutes.
  • Stir in the ricotta cheese and half of the mozzarella until combined.
  • Serve hot, topped with the remaining mozzarella, Parmesan cheese, and fresh basil.

Notes

Pairs nicely with garlic bread or a simple side salad for a complete meal. This soup can be prepared a day ahead and reheated on the stove. For a lighter option, ground turkey or chicken can be used instead of sausage. Feel free to add spinach or zucchini for extra vegetables. A vegetarian version can be made by omitting the sausage and adding more vegetables like bell peppers, mushrooms, and carrots.
