  • 1 lb favorite sausage (chicken or turkey sausage works well)
  • 2 cups orzo pasta
  • 4 cups vegetable or chicken broth
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup spinach or kale (optional)
  • Salt and pepper to taste
  • Grated parmesan cheese (for serving, optional)
  • Fresh parsley, chopped (for garnish, optional)

Cooking Steps

  • In a large pot or deep skillet, heat a little oil over medium heat. Add the sausage and cook until browned and fully cooked, breaking it apart with a spoon as it cooks. This should take about 5-7 minutes.
  • Once the sausage is cooked, add the minced garlic to the pot. Sauté for about 1 minute until fragrant.
  • Next, add the orzo to the pot, followed by the broth. Stir to combine everything evenly.
  • Bring the mixture to a gentle simmer. Cover the pot and let it cook for about 10-12 minutes or until the orzo is tender and has absorbed most of the broth. Stir occasionally to prevent sticking.
  • Once the orzo is cooked, stir in the butter and chopped spinach or kale (if using) until the greens have wilted. Season with salt and pepper to taste.
  • Remove from heat and serve hot, garnished with parsley and a sprinkle of grated parmesan cheese if desired.

Notes

To elevate this dish, consider adding your favorite vegetables such as bell peppers, zucchini, or cherry tomatoes. For storage, keep leftovers in an airtight container in the refrigerator for up to 3-4 days.
