  • 8 oz pasta of choice (spaghetti, fettuccine, or penne are great options)
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup heavy cream Can be substituted with low-fat milk or a dairy-free alternative for a lighter version.
  • 1 cup Parmesan cheese, grated
  • to taste Salt and pepper
  • to taste Fresh parsley, chopped (for garnish)

Preparation

  • In a large pot, heat the olive oil over medium heat. Once warm, add the minced garlic and cook for about 1 minute, stirring frequently to avoid burning.
  • Pour in the dry pasta and stir to coat the strands with the garlic oil.
  • Add the vegetable broth and bring the mixture to a boil. Reduce the heat and allow it to simmer for about 10-12 minutes, or until the pasta is al dente.
  • Once the pasta has cooked, reduce the heat to low and slowly stir in the heavy cream, mixing until everything is well combined.
  • Gently fold in the grated Parmesan cheese, and season with salt and pepper to taste.
  • Remove from heat, sprinkle with chopped parsley, and serve immediately for the best experience!

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3-4 days. You can also freeze the pasta for up to a month, but be aware that the texture may slightly change upon reheating. To reheat, add a splash of vegetable broth or water to bring back the creaminess and gently warm in a pan over medium heat, stirring frequently until heated through.
