One Pot Creamy Garlic Pasta

  • 8 oz pasta (your choice) Feel free to use whole wheat or gluten-free pasta.
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced Sauté until fragrant.
  • 2 cups vegetable broth
  • 1 cup heavy cream Can substitute with plant-based cream.
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish Transforms the dish into a culinary masterpiece.

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until it's fragrant and slightly golden. Be careful not to burn it!
  • Pour the dry pasta into the pot, stirring to coat the noodles in the garlic oil.
  • Slowly add the vegetable broth, making sure the pasta is submerged. Bring it to a boil.
  • Once boiling, reduce the heat to low and cover the pot. Let the pasta simmer for about 10-12 minutes, stirring occasionally until it's cooked al dente and most of the liquid has been absorbed.
  • Stir in the heavy cream and grated Parmesan cheese. Mix until everything is well combined. Season with salt and pepper to taste.
  • Remove from heat and let it sit for a couple of minutes to thicken. Garnish with chopped parsley and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of vegetable broth or cream.
