  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup corn (frozen or canned)
  • 2 cups beef or chicken broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

  • In a large skillet or pot, over medium heat, add your ground beef or turkey. Cook, stirring frequently, until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  • Sprinkle the taco seasoning over the cooked meat. Stir to combine, letting it get fragrant for about 1 minute.
  • Pour in the can of diced tomatoes (with juices) and corn. Stir everything together to mix evenly.
  • Add the pasta to the skillet, then pour in the beef or chicken broth. Stir well, ensuring that the pasta is submerged in the liquid. Bring it to a boil.
  • Lower the heat to a gentle simmer. Cover the skillet and let it cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.
  • Once the pasta is cooked, turn the heat off. Sprinkle the shredded cheese on top and cover the skillet again for 2-3 minutes. This will help the cheese melt beautifully.
  • Taste and adjust the seasoning with salt and pepper as needed. Garnish with chopped cilantro if desired. Serve hot and enjoy!

Notes

For a lighter option, consider using ground turkey or a plant-based protein. To amp up the nutrition, add bell peppers or zucchini along with the corn. If you like it spicier, add jalapeños or chili powder.
