  • 1 pound boneless, skinless chicken breast, diced into bite-sized pieces
  • 1 cup orzo pasta
  • 2 cups broccoli florets, fresh or frozen
  • 4 cups low-sodium chicken broth
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

  • In a large pot, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  • Once the chicken is cooked, add the diced onion and minced garlic to the pot. Sauté for an additional 2-3 minutes until the onion is translucent.
  • Pour in the chicken broth and stir in the orzo. Bring it to a simmer, then cover the pot and let it cook for about 10 minutes, stirring occasionally.
  • Add the broccoli florets into the pot and continue to simmer for an additional 3-5 minutes, or until the orzo is tender and the broccoli is bright green.
  • Reduce the heat to low and add the shredded cheese. Stir until the cheese is melted and creamy.
  • Remove from heat and serve warm. Enjoy the delicious flavors of this one-pot wonder!
