Ingredients
  

Main Ingredients

  • 1 pound sausage (chicken or turkey)
  • 1 cup rice (white or brown) based on preference
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped bell pepper (any color)
  • 2 cups broth (vegetable or chicken)
  • 1 teaspoon paprika
  • to taste salt and pepper

Optional Garnish

  • to taste green onions or parsley for garnish

Preparation

  • Chop the onion and bell pepper, and mince the garlic. Measure the rice and broth.

Cooking

  • In a large skillet over medium heat, add the sausage. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).
  • Add the chopped onion, garlic, and bell pepper to the skillet and sauté for 3-4 minutes until softened.
  • Stir in the rice, broth, and paprika, and bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes or until the rice has absorbed the liquid.
  • Taste and add salt and pepper as necessary. Fluff the rice with a fork, garnish with green onions or parsley, and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat on the stovetop with a splash of broth or water.
