Preparation

  • Start by taking out all your ingredients and chopping the garlic. This makes the cooking process smoother!

Cooking

  • In a large pan, heat a drizzle of olive oil over medium heat. Add the sausage, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  • Once the sausage is cooked, toss in the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  • Next, stir in the tortellini, followed by the heavy cream. Mix well, ensuring the tortellini is well coated.
  • Allow the mixture to simmer for about 5-7 minutes, or until the tortellini is tender and cooked through. Stir occasionally.
  • Add the fresh spinach and Parmesan cheese to the pan. Stir until the spinach wilts and the cheese melts, creating a luscious sauce.

Notes
