  • 1 pound Chicken Breast, cubed
  • 1 pound Gnocchi (store-bought or homemade)
  • 4 cloves Garlic, minced
  • 2 cups Chicken Broth
  • 1 cup Heavy Cream
  • 2 cups Spinach (fresh or frozen)
  • ½ cup Parmesan Cheese, grated
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • 1 teaspoon Italian Seasoning

Preparation

  • In a large skillet over medium heat, add the olive oil. Once hot, add the cubed chicken, seasoning it with salt, pepper, and Italian seasoning. Sauté for about 5-7 minutes until the chicken is golden brown and cooked through.
  • Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Carefully pour in the chicken broth, allowing it to deglaze the pan and pick up any flavors stuck to the bottom.
  • Toss in the gnocchi and let it simmer for about 5 minutes, allowing the gnocchi to cook and soak up the broth flavors.
  • Lower the heat, then stir in the heavy cream, mixing well. Allow it to simmer for another 3-4 minutes until it thickens slightly.
  • Finally, fold in the spinach and cook until wilted.
  • Remove from heat and stir in the grated Parmesan cheese, ensuring everything is well combined.
  • Scoop out a generous portion and enjoy your creamy, one-pan marvel!

Notes

To take your dish to the next level, add freshly cracked black pepper or a pinch of red pepper flakes. For a lighter option, consider using half and half instead of heavy cream. When storing leftovers, keep in an airtight container for up to three days.
