  • 4 pieces boneless, skinless chicken thighs
  • 1 cup balsamic vinegar
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, sliced
  • 1 cup asparagus, trimmed

Preparation

  • Start by washing and chopping your vegetables. Halve the cherry tomatoes, slice the bell peppers, and trim the asparagus. Mince your garlic.
  • Pat your chicken thighs dry with a paper towel. Season them with salt, pepper, and Italian seasoning on both sides.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs to the skillet and sear them for 5-7 minutes on each side, or until golden brown.

Cooking

  • In a small bowl, mix together balsamic vinegar, honey, and minced garlic. Once the chicken is seared, reduce the heat to medium and pour the balsamic mixture over the chicken.
  • Scatter the cherry tomatoes, bell peppers, and asparagus around the chicken in the skillet. Cover the pan and let everything simmer for about 10-15 minutes or until the chicken is fully cooked and the vegetables are tender.

Serving

  • Remove the skillet from the heat and let it rest for a few minutes. Serve the chicken and vegetables warm, drizzled with the leftover balsamic glaze from the pan.

Notes

Get creative with vegetables; feel free to substitute or add others like zucchini or broccoli. Adjust the sweetness by adding more honey if preferred. Searing the chicken creates a beautiful crust and enhances the overall flavor.
