Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup water
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • A sprinkle of fresh parsley for garnish

  • Heat the olive oil in a large pot over medium-high heat. Add the beef chunks, season with salt and pepper, and brown them on all sides, about 5–7 minutes. Remove the beef and set aside.
  • In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  • Return the seared beef to the pot. Add the carrots, potatoes, beef broth, water, tomato paste, thyme, and bay leaf. Stir well to combine all the ingredients.
  • Bring the mixture to a boil. Once boiling, reduce heat to low, cover, and let simmer for about 1.5 hours or until the beef is tender.
  • Remove the bay leaf and serve hot. Don’t forget to sprinkle some fresh parsley on top for that added touch of flavor!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Thaw overnight in the fridge and reheat on low until warmed through.
