Oklahoma Nut Candy

Oklahoma Nut Candy is a delightfully rich and chewy treat that's packed with a mix of crunchy nuts and sweet, creamy goodness. It’s not overly sweet and has the perfect balance of textures and flavors.

Equipment

  • Baking sheet
  • Parchment paper
  • Medium saucepan
  • Candy thermometer
  • Wooden spoon
  • Measuring cups and spoons
  • Mixing bowls 

Ingredients
  

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup evaporated milk
  • 1/2 cup unsalted butter
  • 1 tsp vanilla extract
  • 2 cups mixed nuts pecans, walnuts, almonds, etc.
  • 1 cup chopped peanuts optional

Instructions
 

  • Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside.
  • Cook Candy Base: In a medium saucepan, combine the granulated sugar, light corn syrup, evaporated milk, and unsalted butter. Cook over medium heat, stirring constantly, until the mixture reaches 240°F on a candy thermometer (soft-ball stage).
  • Add Vanilla: Remove the saucepan from heat and stir in the vanilla extract.
  • Mix Nuts: Quickly add the mixed nuts and chopped peanuts (if using) to the saucepan. Stir until the nuts are evenly coated with the candy mixture.
  • Spread Candy: Pour the mixture onto the prepared baking sheet and spread it out evenly with a wooden spoon or spatula.
  • Cool and Set: Allow the candy to cool completely at room temperature until it is firm and set.
  • Break into Pieces: Once cooled, break the candy into bite-sized pieces and store in an airtight container.
