  • 2 pieces ripe bananas (mashed) Use very ripe bananas for sweetness.
  • 1 cup rolled oats
  • ½ cup natural nut butter (peanut, almond, etc.) Can substitute with sunflower seed butter for nut-free version.
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • 1 pinch salt
  • ½ cup dark chocolate chips or nuts Optional add-ins for extra flavor.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, mash the ripe bananas until smooth; this will be the base of your cookies.
  • Add in the rolled oats, nut butter, vanilla extract, baking soda, and a pinch of salt. Mix until well combined.
  • If you’re feeling adventurous, fold in the dark chocolate chips or nuts for an extra flavor kick.
  • Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for approximately 10-12 minutes, or until the cookies are lightly golden.
  • Let them cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 3 days. For longer storage, freeze them for up to 3 months. To reheat, microwave for about 10-15 seconds.
